Diwali Sweets and Snacks Recipes
Kaju Katli is a traditional Indian sweet dish eaten in Diwali. It is made from cashews by thickening milk and sugar.
Ingredients Required making for Kaju Katli are,
- 200 grams of Cashews
- ½ Cup Powder Sugar
- ½ teaspoon of Cardamom powder
- 2 tablespoons of Desi ghee (clarified butter in English)
First of all, soak cashew nuts in hot water for an hour ago. Later after one hour break one cashew to check whether they have become soft from inside. If cashew nuts have become soft, take them out of the water and grind them into a fine paste using a mixer. Add sugar to this paste and mix well.
Take a nonstick pan and cook sugar cashew paste in it on a low flame. Cook and stir the mixture continuously until it gets thick. Once it’s consistency is reached as required turn off the gas. Add cardamom powder to it and mix it well. Let this mixture cool down.
Once it’s cooled down roll it on a greased surface or a greased plate. Then cut it into diamond shape pieces using a knife. Use a butter knife to remove pieces of Kaju Katli from a plate without breaking them.
Kaju Katli is ready to serve. It can be stored in the fridge for 15 days.
Chakli is a spiral-shaped snack made from either rice flour or gram flour. It is called Chakri in Gujarati and Murukku in South India.
Ingredients required for making Rice Chakli are,
- 3 cups of rice flour
- ½ cup ghee
- 4 tablespoon of fresh cream
- teaspoon red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon roasted sesame
- Salt to taste
- Oil to fry
Take rice flour in a bowl and add ghee, sesame seeds, cream, red chili powder, turmeric powder, salt, and water to it and knead it to make a dough.
Grease sides of chakli maker and put this dough in chakli maker. Use a star-shaped nozzle and make round spiral chakli carefully without breaking it. Make all chakli on a plastic sheet.
Heat oil in a frying pan and fry all chakli until golden brown. Rice flour chakli is ready. Serve it as a snack with tea.
Coconut Barfi is another traditional Indian sweet dish which is prepared for festivals and special occasion.
Ingredients required for making Coconut Barfi are,
- 200 grams of grated coconut
- 200 grams of sugar
- 1 teaspoon kewra (screwpine essence)
- 200 gms of condensed milk
- Almonds and Pistachio to garnish.
First, make sugar syrup. Take a pan and add half a cup of water and sugar in it and make a thick syrup. Turn off the gas and let the sugar syrup cool down.
Once it is cooled down, add condensed milk to this syrup and mix it thoroughly. Then add grated coconut and kewra essence to it and again mix it well.
Now roll the mixture on the surface of a greased plate and garnish the top with grated coconut, almonds, and pistachio. After a few minutes, cut small square pieces from it similar to ice cubes size.
Coconut Barfi is ready.
Tomato sev is a crunchy, sweet, tangy and light Indian snack.
Ingredients required for making tomato sev are,
- 500 grams of gram flour
- 100 grams of rice flour
- 250 grams of tomatoes
- 1 teaspoon of turmeric
- 1 tablespoon of red chili powder
- 2 tablespoon of sugar
- 1 piece ginger
- 1 tablespoon of tomato ketchup
- ½ teaspoon cinnamon powder
- salt to taste
In a pan heat water. Add tomatoes and ginger and bring it to boil. After some time remove them from the water. As the tomatoes and ginger cool down, peel it and make its paste in a mixer.
In a vessel, add this tomato ginger paste, salt, turmeric, chili, sugar, and cinnamon powder and cook it until this paste get thickens. Once the paste is ready to turn off the flame and let it cool down.
After the paste is cool and ready, add gram flour and rice flour in it, put salt, tomato ketchup and oil in it and mix well and make a dough. If needed, add a little water.
Fill this dough in greased sev maker machine. Use multiple hole sieve. In a frying pan, heat oil and start making sev be careful they don’t get burn. Fry this sev until golden brown and then take it down.
Tomato sev is ready.
