Wash rice a couple of times with clean water and pressure cook it with 2 cups water and 1 teaspoon salt for 2-3 whistles on medium flame.
In a round bottom pan, add oil and heat it on medium flame.
We will begin with tempering. Add mustard, seeds in oil.
Once the seeds crackle, add Asafoetida, Dry chilies, curry leaves, peanuts, and grated coconut and stir it continuously.
Now add urad dal and chana dal and stir it.
Now mix steamed rice to it and fresh lemon juice and cook for 2-3 minutes.
Lemon Rice is ready to serve with fresh coriander leaves.
Serve it hot with cucumber raita.
