- 2 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 pureed ripe bananas
- 1/2 cup melted vegan butter or 1 tablespoon olive oil
- 1 teaspoon vanilla essence
- 1/2 teaspoon ground cinnamon
- 1/2 cup almond milk
- 1 cup chopped nuts
For Banana Cake Frosting
Preparation Time 5 minutes
Cooking Time 5 minutes
- 1 pureed banana
- 4/3 cups agave syrup or maple syrup
- 1/2 cup water
- 2 tablespoons almond milk powder
- 1 cup pure olive oil, or coconut oil or any store-bought vegan shortening
- 1 teaspoon vanilla essence
Instructions
For Banana Cake Recipe
- To make eggless banana cake, first, grease a baking tin with vegan butter or olive oil, and dust it off with some almond flour.
- Preheat microwave to 180 degrees C for about 10 minutes.
- Take another bowl and add a pureed ripe bananas to it.
- Now add olive oil or vegan butter to it and mix well.
- In a plate take chopped nuts and dust them with almond flour, so that they don’t get settle below the baking tin.
- Sieve and mix flour baking soda, ground cinnamon, and baking powder in another bowl.
- After doing so, add the flour mixture to the wet banana mixture and mix.
- Whisk this mixture so that no lumps remain in the middle.
- Add some almond milk and vanilla essence to this mixture, your banana cake batter will be good.
- Pour the cake batter into the baking tin and spread it evenly.
- Add dusted nuts. and carefully place it in the microwave.
- Now, bake it for 40 to 45 minutes at 180 degrees.
- After 40 minutes pierce a toothpick in the center and check if the cake is properly cooked.
- The toothpick should come out clean.

For Banana Cake Frosting
- In a saucepan, whisk together the agave syrup or maple syrup, water, almond milk powder, over the medium flame while stirring often until it starts to simmer.
- Transfer the mixture to a glass bowl and refrigerate it for about 60 minutes.
- In another bowl, take pure olive oil, or coconut oil or any store-bought vegan shortening, vanilla essence, and beat it using a fork until fluffy.
- Add pureed bananas and whisk it until smooth.
- Frosting for Banana cake is ready.
- You can store this banana frosting in an airtight container in the fridge for about 10 days.
